Ballyhaise — the pizza run

About seven or eight kilometres north of the town, ten minutes in the car, with the River Annalee for company most of the way. The collection point is 9B Church Street, Abbeyland — the entrance is round the back of the Black Horse Inn, off the Newcourt Car Park. Look for the Black Horse and come round the back; that is the entire trick. The same run works from Butlersbridge, Lavey.

What you are actually collecting
The takeaway is not a simplified version of the restaurant menu. It is the same menu, cooked by the same kitchen: sourdough Neapolitan pizzas proved for seventy-two hours and baked in the stone oven for about ninety seconds, dry aged smash burgers made with beef from Herd Butchery in Butlersbridge, wings, loaded fries, and sides that vanish on the way to the car.

Ballyhaise has the agricultural college — Ballyhaise College, run by Teagasc, with four hundred students who have very strong opinions about dinner — and a village that has learned to feed them all.
Honest notes on the journey home
Our pizza does not travel forever. A base fermented for three days comes out with an open, blistered crust, and that crust starts to soften the moment steam gets trapped in a box. Fifteen minutes in a car and you have a very good pizza rather than the pizza we actually made. Ballyhaise is close enough that this barely matters — collect, drive, eat, in that order, and you get close to what comes out of the oven.

The practical run
Allow 30 minutes from ordering to ready, longer on a Friday or Saturday evening when the oven is working through the room and the collection orders at once. Parking is free for two hours in the Newcourt Car Park during the day and essentially free everywhere in town after five. If you are coming down from Butlersbridge you are practically already here.
