About six kilometres north, eight minutes in the car, just off the N3 — the bridge over the Annalee is the giveaway. The collection point is 9B Church Street, Abbeyland — the entrance is round the back of the Black Horse Inn, off the Newcourt Car Park. Look for the Black Horse and come round the back; that is the entire trick. The same run works from Ballyhaise.

Our pizza does not travel forever. A base fermented for three days comes out with an open, blistered crust, and that crust starts to soften the moment steam gets trapped in a box.
